Rachel McCoig
Sales Manager
Rachel McCoig joined the Convention Center staff in 2013 as a Food & Beverage Manager, and has extensive experience in food service. She now works as a Sales Manager at Knoxville Convention Center and World’s Fair Exhibition Hall.
McCoig did her undergraduate studies in food and nutrition at Auburn University from 1990 to 1993. She then served in a culinary internship at the Hotel Nicolay in Zeltingen-Rachtig, Germany, in 1994.
Most recently, McCoig was the Food Services director for Valley Services Inc. at Hiwassee College in Madisonville, Tenn. She was also interim Food Services director at Tyler College in Tyler, Texas. Her next position with Valley Services was with Coca-Cola headquarters in Atlanta, where she oversaw a $10 million annual operation that included refreshment, catering and dining services.
Originally from Montgomery, Ala., McCoig has worked throughout the South in the food service industry before settling in Knoxville. She enjoys volunteering for the Junior Achievement program and teaching career success to high school students in the Andersonville, Tenn., schools.
